Chicken Fettuccine Alfredo
When it comes to pasta dishes, there isn’t anything quite as delicious and memorable as a chicken fettuccine alfredo. It’s warm, creamy, and all around enjoyable, hence why ever restaurant that claims to be inspired by Italy has one on the menu, even though it’s not really made there. But I digress. So, for tonight, we’re going to make a full alfredo sauce, some chicken, and have a good time. Pairs well with a garlic toast!
Ingredients
Chicken
1 ½ lb chicken breast, cubed
2 tbsp butter
½ tsp dried oregano
½ tsp dried basil
½ tsp salt
½ tsp pepper
16 oz fettuccine pasta, cooked
¼ cup fresh parsley
¼ cup shredded parmesan cheese (No Kraft processed)
Sauce
2 tbsp butter
4 cloves garlic, minced
3 tbsp flour
1 ½ cups cream
½ tsp dried oregano
1 tsp dried basil
1 cup shredded parmesan cheese (No Kraft processed)
½ tsp salt
1 tsp pepper
Instructions
In a pan over medium-high heat, melt butter, then add the chicken breast.
Season with salt, pepper, oregano, and basil. Cook until chicken is fully cooked through, this should be about 8 to 10 minutes. Remove from heat and set chicken aside.
While you are doing this, bring water to a boil with a heavy salt. It should taste like the dead sea, or maybe the tears of a grown man who lost to a child in video games. Cook your pasta in this salty water until it is your desired texture, though al dente is recommended.
We are following the 3 R’s here tonight, so we are going to reuse that pan. Over medium heat, melt butter and add the garlic. Cook until the garlic begins to soften. Now add half of the flour to the garlic and butter, stirring until basically looking like glue. Since you dumped all the flour in, pretend to add the rest now.
Slowly add cream to the mixture, and don’t do what you just did and pour it all in at once. Stir as you add it, and keep going until the mixture thickens into a nice sauce. Dump in your seasoning now, stirring so it is well mixed.
Add parmesan cheese and stir until melted.
Toss your pasta and chicken into the saucey pan and mix well. Add your parsley and parmesan, and mix more.
Plate and enjoy.
