September 4th, 2020: Penne alla Vodka

Ingredients

2 Cups Penne

2 TBSP Butter

1 Cup Heavy Cream

1 Cup Parmesan Cheese, grated

1/3 Cup of Vodka

1 Can of diced tomatos

1 onion

4 cloves of garlic

Spices

Italian seasoning

Salt

Pepper

Instructions

  1. Cook Penne in salted boiling water according to instructions

  2. Prepare Vodka Sauce

    • Place a large pan over medium heat and melt butter in pan. Add onions, diced finely, and cook for 2-3 minutes

    • Add garlic and spices, stiring for 30 seconds

    • Blend tomatos in a food processor until smooth. Add puree to pan, and then add vodka. Simmer for 10 minutes over low-medium heat.

    • Stir in heavy cream until fully combined, and add in cheese, simmer for another 5 minutes or until thickened to liking. 3) Drain the cooked pasta, add to sauce, toss to coat. Garnish with basil, parmesan and pepper.
