Meatloaf Dinner
It is a recent online acquaintance’s birthday, and she says her favourite meal is meatloaf. So let’s make a meatloaf dinner.
The thing I like about this recipe, is that it is fairly easy to convert this to a vegetarian or even vegan friendly recipe if you want.
Ingredients
Meatloaf
Half a pound of ground beef
1 large egg
2 TBSP of bread crumbes
3 TBSP of BBQ Sauce
1/4 tsp of paprika
1/4 tsp of garlic powder
1/4 tsp salt
Green Beans Recipe
1 pound fresh green beans, trimmed and snapped in half
3 tablespoons butter
3 cloves garlic, minced
2 pinches lemon pepper
(Optional) 1 cup of diced baby carrots
Potatoes
1 pound of potato
1 tbsp of olive oil
1/2 tsp of seasoning salt
Salt and pepper
Instructions
Potatoes
Preheat oven to 400°F
Peel the potatoes and cube them (1/2” to 3/4”). Place onto a large baking sheet
Drizzle olive oil over the potatoes and apply salt, seasoning salt, and pepper. Toss until evenly coated.
Place in oven for 15 minutes
Meatloaf
In a medium bowl, combine ground beef, egg, bread crumbs, 1 tbsp of BBQ sauce, paprika, garlic powder and salt.
Work ingredients together with your hands until evenly mixed. Divide mixture into two pieces and flatten into roughly an oval shape
Once potatoes have been roasting for 15 minutes, remove from oven. Push potatoes to one side, placing the meatloafs on the other.
Spread 1 TBSP of BBQ sauce onto each meatloaf.
Return baking sheet to the oven for 25 minutes.
When completed, remove and plate with potatoes and veggies.
Green Beans
Place green beans into a large skillet and cover with water; bring to a boil. If using carrots, add them in here too.
Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes.
Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.
Cook and stir garlic with green beans until garlic is tender and fragrant, 3 to 4 minutes. Season with lemon pepper and salt.
