Friday Night Feast

Tonight we’re doing something a little different, and involving a whole lot of cheese. I’ll be doing stuffed chicken with mozzarella with cheese and herb potato fans!

Ingredients

Mozzarella Stuffed Chicken w/ Marinara

  • Chicken Breasts

  • Mozzarella

  • 1 Cup of Flour

  • 3 Eggs, beaten

  • 1 Cup of panko

  • 1 tsp oregano

  • 1/2 tsp garlic powder

  • Grated parmesan

  • 2 cups of marinara

  • basil

  • parsley

Herb and Cheese Potato Fans

  • Potatoes

  • 1/2 Cup of melted butter

  • 2 tsp of salt

  • 1/2 tsp of pepper

  • 1/3 shredded parmesan

  • 2/3 cup shredded cheddar

  • 2 tbsp chives

  • 2 tbsp thyme

  • 2 tbsp dill

 

Instructions

  1. Preheat your oven to 425°F.

  2. With a sharp knife, slide the potatoes into 1/8” slices, leaving them attached at the bottom of the potato. Place them into a greased backing sheet.

  3. Mix butter, salt and pepper, and drizzle over potatoes.

  4. Place uncovered into oven for 50-55 minutes.

  5. Cut a slit into the chicken breasts, and stuff created pockets with mozzarella, pressing edges together to reseal them

  6. In three separate bowls place the flour, eggs, and panko whisked together with garlic powder, oregano, a 1/4 cup of parmesan and a pinch of salt.

  7. Dip the stuffed chicken breasts into the flour, then the egg, then dredge chicken in bread crumbs, ensuring chicken is evenly coated.

  8. In a large skillet over medium heat, heat a thin layer of oil, add chicken to the skillet and cook until both sides are golden brown.

  9. Pour marinara over the chicken. Scatter basil over the top of the sauce. Remove from hear, prinkle remaining parmesan over the top of the chicken

  10. Place skillet in oven and bake for 20 minutes. Garnish with chives and parsley and serve warm.

  11. After potatoes have been in for first timer, remove from oven, sprinkle cheese and herb mix over the potatoes and place back in the over for 5-10 minutes.
